Salads are a great addition to any Tapas meal. This simple salad made with Arugula is one of our family favorites.
Arugula is a pretty amazing lettuce. It is also called salad rocket, roquette, rucola, rugula, or colewort. It is in the same family as kale, cabbage, cauliflower, and mustard greens so you can probably figure out that it is good for you. It's got lots of iron and copper and is a great source of folic acid and vitamins A, C, and K. It is actually one of the best vegetable sources of vitamin K so it produces a boost for bone and brain health. Its natural peppery flavor is said to have a cooling effect on the body. School is out for summer so I think we are going to have to put this one to the test!! Go outside, run around, and then have a bite of this Arugula Salad. The dressing is almost too easy for the flavor you get. Juice one lemon and mix together with one minced garlic clove, and a splash of olive oil and mix together with arugula. We always use a vegetable peeler to add Parmesan to salads. It provides the perfect slice. Once peeled crumble slightly smaller and top the dressed salad.
If you have never tried arugula, I think this is one of those salads that you don't get until you taste it. It almost seems like there would be no flavor because it is so simple. Once you taste arugula you will understand. It needs very little to stand out. Enjoy!
