Artichokes are fabulous and make a wonderful Tapa Tuesday dish. They can be prepared in a number of ways, but our favorite is steamed and served with an Aioli dipping sauce.
1 cup mayonaise
2 garlic cloves
First cut off the stem on the bottom of the artichoke so it's flat and sits upright. Place into a steamer pan, cover, turn on heat and WAIT. Artichokes take about 20-30 minutes to cook this way. You know they are ready when you can easily pull off the leaves and the flesh is tender. While you are waiting you can prepare your dipping sauce. In a bowl combine mayonaise, lemon, and minced garlic. (A garlic press is a great kitchen tool to mince garlic.) Then using a fork, whip the mixture until the texture is smooth. Enjoy!
